It is green if young are soft and you can also cook them or make a salad of it. Whenever you want to cook them, select young fireweed as older will taste bitter.
I usually make its juice in a large saucepan adding 21/2 cups water to boil in quickly. Include 2 cups hard-packed fireweed petals into the boiled water and let it be cool. Now refrigerate it overnight to extract its colour.
